such as Albert Einestein, Hellen Keller, Henry Kissinger, etc.

Many writers mention many famous people in their books, of all faiths and beliefs. If a book has to do with Judaism, the writer may include references to Jewish figures in pop culture and lore.

Needless to say, it’s incredibly unlikely that you have read every book written by Jewish authors, so you don’t really have a place to say that Jewish authors mention Jewish figures in their works more than writers of other religions include references to their faiths.

Helen Keller wasn’t Jewish. She was Christian.

For example, Jewish shepherds would break the legs of a sheep who kept running away, and carried it on his/her shoulder. The sheep would spend so much time with the shepherd, that it would never run away again and stay by his side. Or the history of the river that ran by Gethsemane and was filled with blood during the one of the holidays.

Most of the Bible from the time of Abraham on is on Jewish culture. That is where it comes from. The stories you state might be in oral tradition or historical books.

She "thinks" one day she might like to convert. Our family is Catholic.

Despite our love of books, Judaism isn’t something you can truly learn from one. There are some decent introductions though, I’ll star and hopefully some of my contacts can recommend a few.

Getting in touch with a rabbi and synagogue is a better way to learn. Community is very important to Judaism. It also helps to have people to talk with because we rarely have simple answers. Well, technically there is a simple answer. And then a dozen others.

Contrary to the other answers here, reading Torah on your own isn’t the best way to understand Judaism. Torah is the first layer in a dialogue that’s been going on across generations for more than 3000 years. These texts are very old – and it’s misleading to read them as if they were written today.

Would she be interested in taking an Intro to Judaism type class? How about attending services? Talking with young people who are around her age? If any of those appeal, speaking with a rabbi is probably a good place to start.

(And compliments to you for helping her explore this. I converted from Catholicism to Judaism 15 years ago and it took my parents nearly that long to accept it.)

There are none.

You might have thought that Jewish historians would have noticed the slaughter of innocents by Herod.

There is one historical person mentioned in semi-sacred Jewish documents called the Tosefta and the Baraitas: Yeishu ha Notzri, a rabbi belonging to a messianic sect who was thought to have magical powers and who was denounced and executed as a sorcerer. He was stoned and his body hung as an example. He had disciples, among whom where Matti (Matthew) and Todah (Thaddeus). Big problem, however: he was active around 85 BC.

Josephus’ mention of Jesus is generally thought to be a "pious forgery" by Christians, added to some copies of his text and not others, in later centuries.

There are records of John the Baptist.
